How can I control Gastritis, Interstitial Cystitis and more inflammaton in my body?

Yesterday I had a scope of my esophagus and stomach resulting in gastritis (inflammation of the stomach lining), the beginning of ulcers, a polyp in my esophagus and a hiatal hernia which is causing the acid reflux and other symptoms. This got me thinking about how I have been living with Interstitial Cystitis for the last 10 years which was diagnosed by a scope into my bladder that showed inflammation of the bladder lining and pinpoint hemmorages similar to ulcers. Also, I have had abnormal papsmears for the last 6 or so years. The follow up papsmears always come back fine but when the doctor swabs the tissues I began to bleed due to the inflammation. I had a biopsy of my cervix due to these results years ago and it just came back inflammation. So I have inflammation of my stomach, bladder and cervix. What is going on and what can I do about it? Are there dietary changes that I need to make? The doctor told me simple things like no caffeine, coffee, tea, soda pop and things that I already do not drink and also just gave me some medicine. I would rather make the changes to my diet then live on medication. What makes someone so inflammed in so many places?
